I guess that 'sorry' expresses an emotion of sad, shame, regret, and so on meanwhile 'apologize' is an expression of conveying being sorry for a problem made by a speaker, for all I know. 日本人の「好き」と「愛してる」だってそんなに変わらないでしょ?
